Jose Authentic Mexican Restaurant

Jose Authentic Mexican Restaurant is a small 58-seat restaurant that offers a reasonably broad range of Mexican food prepared and presented in a traditional Mexican style. It is located in New England in a mature business district on the edge of a large metropolitan area. The site is adjacent to a central artery and offers limited free off-street parking. Patrons enter the restaurant through a small vestibule that opens directly into the dining area; there is no separate waiting area. Upon arrival patrons are greeted by a hostess and either seated directly or apprised of the expected wait time. During the weekends the wait to be seated can be as long as 45 minutes. Because space inside for waiting is very limited patrons must remain outside until their party is called. Jose Authentic Mexican Restaurant does not take any reservations.

One of the employees at Jose Authentic Mexican Restaurant Ivan Karetski, has been seeing a decline in tips. He has seen other employees such as cooks, complain about the lack of ingredients and the quality of the food. Also a recent survey was conducted about the service at the restaurant, and the most frequent complaint were the customers not being seated at a reasonable time.

The number one problem or issue that Jose Authentic Mexican Restaurant is facing is the lack of space in the restaurant, and the patrons being seated in a timely manner. Recently the cooks have been complaining about the lack of ingredients and the quality of food. This could also have a major impact on the reason Ivan has seen a decline in tips, due to the wait time of the customers being seated and also a longer wait of preparation of the food. As a consultant my job is to fix the time efficiency in the restaurant. We need to figure out how can we expand the restaurant or use the space the restaurant has efficiently. We need to figure out why Ivan has seen a decline in tips. Has Ivan seen a decline of tips due to wait time for the customers being seated, and also is the wait time higher than normal due to inefficient food preparation.

As stated before, Jose Authentic Mexican Restaurant is having problems due to lack of space which has caused higher wait times for customers. Also the cooks have been complaining about the lack of ingredients and quality of food, which possibly has led to higher preparation times for the food. This also could be the reason why waiter's tips are declining due to high wait times for the customers. It's located in a trendy area, where space is limited. There is no parking for the customers, and the restaurant only holds 58 seats. Once inside the restaurant, the customers are affected due the lack of a waiting area. The cooks have been complaining about the ingredients and the quality of food. This could have a correlation with the customers being seated in a timely manner because of longer food preparation time. On Saturdays, the wait could be as long as 45 minutes to be seated.
