Egg Nog Preparation Method

Preparation and cooking time: 15 minutes Serves 2

450 ml (¾ pint) milk half a nutmeg

2 egg yolks

2 tablespoons caster sugar

2 tablespoons brandy

To garnish:

a pinch of grated nutmeg

This rich and velvety drink is a wonderful night-cap for a cold evening. Its strong nutmeg flavour, along with the brandy, gives it an uplifting warmth which cheers the soul on a winter's evening.

Heat the milk with the nutmeg for 5 minutes, and then strain it and keep it warm. Beat the egg yolks with the sugar until the mixture is thick and light. Stir in the brandy. Pour the hot milk over the egg mixture, stirring well, and serve immediately, a pinch of grated nutmeg sprinkled on top.

Baked All Spice Bananas

Preparation and cooking time: 25 minutes Serves 4

4 bananas, sliced

50 g (2oz) Demerara sugar

2 teaspoons ground allspice

150 ml (5 fl oz) carton of single cream

Oven temperature: Gas Mark 4/180ºC/350ºF

This is one of the simplest, yet most delicious desserts I know. In my opinion, the banana changes identity totally when it is cooked: it becomes a far more elegant and delicate fruit. Allspice and bananas are made for each other, as this recipe proves!

Preheat the oven[1]. Put half of the bananas into an ovenproof dish and sprinkle them with half of the Demerara sugar and sprinkle on the rest of the sugar and allspice. Pour the cream over the top and cover with foil. Bake for 20 minutes and serve either hot or cold.
